Murcia

Murcia is a wonderful part of Spain. Not famed for its food and yet you can drive mile after mile and watch the very best fresh vegetables being picked. It is indeed Spain's very own market garden.

I love the gypsy stew served in Murcia (Olla Gitana).  Chickpeas, dried white beans, green beans, pears, potatoes - almost everything grown in Murcia gets thrown into the pot for this superb stew. They stuff peppers well here and Pimientos Rellenos (stuffed bell peppers) has become a very popular meal in regions far from Murcia. 

On the Mar Menor coastline fish such as GIlt head bream is landed and cooked in a salt crust. The Caldero Murciano (Murcian fish stew) can be made simply from fish scraps, herbs, tomatoes and mullet. Tomatoes from Murcia are as juicy and tasty as they can be. Figs are also plentiful here, providing the glorious to taste fig bread (Pan de Higos). Murcia is also famous for its Calasparra rice. It grows for as far as the eye can see on the flood plains of the Rio Segura

And in summer the best salads on offer in Spain can be prepared or eaten in Murcia. So many of the ingredients are grown locally. Salads served in some Spanish locations can appear tired. Here, in marvellous Murcia, they are full of flavour and life. A bit like Murcia itself.

The last meal from my memorable time in the province of Murcia was one that included not only the best and freshest broad beans from the region, but combined them with a real favourite of mine. Morcilla.
Not to everyone's taste, i know. Although I am proud of how many people I have converted to the joys of this unique sausage.

Cauliflower Salad with Tomato

I confess that until living in Spain I thought that the most interesting thing you could do with a cauliflower was serve it with cheese. How wrong I was.
While motoring around Murcia, i stopped off in the characterful Caravaca de la Cruz and ate well on locally grown vegetables.

Spring Cabbage with Capers

A nice caper!

The spring cabbage on offer in the region of Murcia was also a delight. So fresh, so light and so ready for the kitchen.
True, they are better when just in season and the tops are young, sweet and tender. At other times you could use broccoli instead.

You can eat this as a meal in its own right or, alternatively, along with some nice white fish or chicken.

Salt Cod Paella

If your not convinced about the merits of eating salt cod (Bacalao) on its own, then why not try it in a Paella? It's a great way I have found to enjoy the cod while sampling a Spanish classic. Certain cuts of Bacalao are ideal for cooking with rice. As mentioned in the earlier article about Bacalao, meals cooked with salt cod are broken down into those cooked with or without tomatoes. This one is in the former category.
