Anchovies (boquerones) are a classic preserved food in Spain. They can be kept for few extra days after being landed with the use of salt or vinegar or both.

Here is a recipe for preserving and serving fresh anchovies. In tapas bars across Spain you may be served them alongside some crisps or vegetables.
