The fish van came by my house this morning. It delivers fresh fish to villages that are 30 or more minutes inland from the coastal port of Motril. The senior women of my village never miss the fish van. That could explain in part why they live to such a grand age. I was there in the queue behind them this morning. I just wanted something simple. Sardines. And life in Spain comes no more simple than sardines.

Festive tapas - meat free

Time to have some light tapas. Before the potential overindulgence begins, give your stomach a rest and enjoy some vegetarian Spanish tapas dishes. Beginning with a favourite of mine, Berenjena con queso.

Berenjena con queso (aubergine with cheese) - 4 tapas

Ingredients:- 4 thin slices of easy to melt cheese, cut to fit the aubergine. 8 thin slices of aubergine. 2 beaten eggs for coating. Flour for coating. Olive oil for frying. Salt to taste.

You can fry Sardines, grill them or you could even bake them. You heard me right. Baked Sardines (Sardinas al Horno). This time we use small sardines, remove the heads and we add some garlic, breadcrumbs and parsley.
