Since living in Spain I have become a huge fan of fennel. It's wonderful and I've added it to more meals in Spain than I ever did previously.
The perennial herb is at home on the shores of the Mediterranean.

My message to anyone who is a little timid when it comes to eating seafood is to think again once in Spain. I am willing to bet that in a restaurant, or through buying from your local fish delivery van or market; there will be a creature from the seas which - once prepared and cooked correctly - will become a new favourite meal for you. Here is a case in point. My favourite, Octopus, with lemon and garlic.

You can fry Sardines, grill them or you could even bake them. You heard me right. Baked Sardines (Sardinas al Horno). This time we use small sardines, remove the heads and we add some garlic, breadcrumbs and parsley.
