I'm second to nobody in my admiration for the aubergines that are on sale in Spain and for the exciting variety of dishes in which they can feature. It's one of those vegetables that i had little contact with prior to first sampling Berenjenas con Miel (aubergines with honey) in the charming location of Ronda. Since then its been aubergines all the way for me. Here's a recipe for Berejenas Fritas. An easy and tasty meal whether it is served as a tapas or raciones.
List of Ingredients:
2 large and firm aubergines
150 mils of milk
4 heaped tablespoons of strong bread flour
1 tablespoon of semolina
1 teaspoon of sea salt
Olive pil for frying
Preparation Instructions:
Remove the outer covering of the aubergines and slice them thinly. Have the milk ready on one plate. Spread another plate with the semolina and salt. Heat the olive oil, equivalent in quantity to the depth of a finger, and until a blue haze appears. Flip the slices first in the milk and then dust them lightly in the flour. Drop them one by one into the hot oil, only adding as many as will cover the surface of the pan. Fry until crisp and golden, turning them once. Transfer to kitchen roll paper to drain. Continue the process until all are ready and serve them hot.
