Patatas a lo Pobre (Poor Man's Potatoes)

Ingredients for 4:

300ml olive oil
3 Spanish onions, thinly sliced
5 garlic cloves, thickly sliced
1 kg potatoes, peeled and cut into large cubes
3 green peppers, seeded and roughly chopped
4 bay leaves
Salt, pepper


Heat 5 tablespoons of oil in a large sauté pan or a wok, when hot add the onions, lower the heat and cook the onions slowly stirring from time to time. When the onions turn soft and slightly brown add the garlic, pepper and bay leaves and cook for 15 minutes. Add the potatoes, salt and the remaining oil. Let everything simmer gently for another 20 minutes or until potatoes are soft.

Drain the excess oil (reserve it for another time e.g. making tortilla) and serve.

Top Tip
If you want to turn this dish into Patatas Bravas, (in English, Fiery Potatoes) drain off the oil as before and then add 6-8 tablespoons of Brava Sauce (add more or less to taste depending on how hot you like the dish) and warm through on the hob.
